  • 3/4 cup Archway Windmill cookie crumbs
  • 1 cup quick-cooking oatmeal
  • 1 ½ cups packed dark brown sugar
  • 1 ½ cups unsalted butter, divided
  • ¼ cup plain flour
  • 1 ½ cups mashed sweet potatoes
  • 2 large eggs 1 tablespoon bourbon
  • 1 cup chopped, salted roasted walnuts


  1. Preheat oven to 325ºF degrees.
  2. Lightly spray a 9-inch pie plate with nonstick cooking spray.
  3. Melt butter.
  4. In a medium bowl, stir together cookie crumbs, oatmeal, 1 cup brown sugar and melted butter. Set aside 1 cup for topping.
  5. Press remaining mixture firmly into pie plate.
  6. Bake until a light golden brown (about 7 minutes). Cool completely.
  7. For filling, stir together ¼ cup flour, ½ cup brown sugar, mashed sweet potatoes, eggs, bourbon and ½ cup melted butter in a medium mixing bowl, mixing well.
  8. Pour filling over crust and sprinkle with remaining oatmeal mixture and chopped walnuts.
  9. Pat topping down gently into filling.
  10. Bake 35 minutes or until center is set and topping is lightly browned.
  11. Cool completely to serve.
